1 / Butter Chicken Kebab Roti
Ingredients:
8 Aldi BBQ chicken kebabs
1 packet of Indian style roti paratha
1 Jar of butter chicken sauce
1 bunch of coriander
2 stems of shallots
1 cucumber
½ cup Greek yoghurt
Method:
Cook the chicken kebabs on the BBQ or pan for 6 minutes on each side or until cooked through, then place them to the side on a plate and cover with foil to rest.
Remove the roti packet from the freezer, spray a large fry pan with some cooking oil and cook 1 roti at a time for 4 minutes on each side, then repeat with the others.
While the roti is cooking, finely chop your shallots, cucumber and coriander.
In a bowl in the microwave or a pan, heat the butter chicken sauce.
Remove the chicken from the wooden skewers,
To serve up, place a cooked roti on a plate, top with desired amount of chicken then drizzle some butter chicken sauce over the top. Top with cucumber, shallots and coriander and then add a dollop of Greek yoghurt on top.

2/ Salmon Poke Bowls
Ingredients:
4 pack of ALDI skinless salmon fillets
1 ½ cups brown rice
1 avocado
Packaged chilli lime crunch salad
1 packet of Asia Garlic, basil & chilli stir fry sauce or ½ cup teriyaki sauce
Kewpie Mayonnaise
1 tbsp sesame oil
Method:
Cook your brown rice as per packet instructions (or use microwave rice for a quicker option).
In a large pan add 1 tbsp of sesame oil, once hot add in your salmon fillets. Turn after 5 minutes and cook on the other side for 3 minutes, and then break apart with a spatula.
Once the salmon begins to fall apart add in your sauce and mix through and turn to a low heat and leave for another 5 minutes.
Prepare your salad in a large bowl, add in the dressing and crunch noodles.
Dice up one avocado.
Once the rice is cooked, divide it evenly between bowls, top with salmon mix, salad, avocado and then drizzle some kewpie mayonnaise over the top.

3/ Meatball Pasta Bake
Ingredients:
1 packet of Aldi premade pork & beef meatballs
400g spiral pasta
½ white onion
5 large mushrooms
½ cup of mozzarella cheese
1 tsp salt, 1 tsp pepper, 1 tsp oregano
1 can of diced tomatoes
1 cup of passata
Method:
Preheat your oven to 180 degrees.
Bring a large pot of salted water to a boil.
Add in 400g spiral pasta and cook for 10-12 minutes.
In a large fry pan add some olive oil and ½ a white onion finely diced and sauté for 3 minutes.
Add in your meatballs with the onion and cook for 10 minutes turning every few minutes.
Then add in 1 can of diced tomatoes, 5 chopped mushrooms, 1 tsp salt, 1 tsp pepper, 1 tsp oregano, ½ cup passata sauce.
Turn down to a low heat and let that simmer for 5 minutes.
Drain your pasta from the boiling water.
Add the pasta into the meatball sauce mixture and stir through well.
Place the entire mix into an oven safe dish and cover with mozzarella cheese,
Place into the oven for 10 minutes or until the cheese is melted and golden.
Divide between bowls.
